Beef Ragu Tteokbokki

Ingredients:

-300g Minced Beef
-1 medium size Zucchini chopped
-1 medium yellow onion chopped
-4 cloves of garlic chopped
-1 tbs of tomato paste
-400g of canned diced tomato
-1 tbs of gochujang
-450g of tteokbokki
-Grated Parmesan cheese

Steps:
1- Prep the tteokbokki according to the packaging directions.
2- Chopped up the zucchini, onion and garlic.
3- Heat up the 3.8l vision pot on medium to high heat.
4- Once it is hot, add about 2 tbs of olive oil. Add the minced beef and cook it for
about 3-4 mins till fully cook. Once cooked, take it out and set aside.
5- In the same pot, add in 1 tbs of cooking oil and add in the onions, zucchini and 
garlic. Sauté the vegetables till the onions become slightly translucent.
6- Add in the gochujang and tomato paste and cook it for about 2 mins.
7- Put the cooked minced meat and mix well.
8- Add in the canned tomato and bring the mixture up to a simmer.
9- Add in the rice cakes and give it a stir.
10-Let the rice cakes simmer for about 5-7 mins. Stir them occasionally so they do 
not stick together. *Add about a cup of water if mixture is too dry.
11-Season with salt and pepper to taste.
12-Add in grated parmesan before serving
