Chicken Peanut Sauce Noodles

  • Ingredients:
  •  300g Minced Chicken
  • 1 medium yellow onion chopped
  • 4 cloves of garlic chopped
  • 1 tbs of Sriracha
  • 200g of Creamy Peanut Butter
  • 4 tbs of Soy Sauce
  • 2 Tbs of Rice Vinegar
  • 400g Of Glass Noodles
  • Spring onions and Sesame Seeds for Garnish

 

  • Steps:
  • In a bowl, soaked glass noodles for about 5-10mins in hot water.
  • Heat up the 3.8l vision pot on medium to high heat.
  • Once it is hot, add about 2 tbs of cooking oil. Add the minced chicken and cook it 
    for about 3-4 mins till fully cook. Once cooked, take it out and set aside.
    In the same pot, add in 1 tbs of cooking oil and add in the onions and garlic.
  • Sauté the vegetables till the onions become slightly translucent.
  • Add in the peanut butter, sriracha and soy sauce.
  • Mix the sauce well and add ½ cup of water if mixture is too thick.
  • Put the cooked minced meat and mix well.
  • Bring the sauce up to a simmer.
  • Strain the glass noodles and toss with the sauce.
  • Garnish with sesame seeds and chopped spring onions.
    *add chilli flakes if you would like it to be spicier
